What’s for lunch today?? I made this HUGE salad! What’s for lunch today?? I made this HUGE salad! Not sure if I can eat it all lol!

Here’s what’s in it:
Blend of Romaine/Kale/Spinach
Cucumber
2 slices of bacon 
2 slice of roasted turkey
Shredded Mozzarella Cheese
Sprinkled with those crispy onion straws!

Then for dressing, instead of buying premise at the store I like to just season my salad with garlic powder, and Italian seasoning then drizzle with olive oil & vinegar! 🙌🏼
“Mommy that outfit looks very nice for you” 😢 I need a melting bear emoji! LOL! When I looked at myself this morning I just saw the typical work at home athleisure sporting mom I see most days and was just happy my messy bun cooperated.

But as my toddler so sweetly reminded me, we are what we think! And although I do make it a priority to speak AND THINK kindly of myself, we can all do better everyday!! It’s that 1% better everyday I’m shooting for, how about you?

I have wanted a piece from @kendrascott for YEARS and just never bought any for myself. And then yesterday while I was a hot mess in the kitchen baking cookies my husband strolls in with this beautiful package and goes, what’s this?

I read the card and my eyes filled with tears.

This girl - man I am NOT a cryer but I’m crying writing this post. What started as me simply learning about keto, opened my eyes to an amazing opportunity that has allowed me to share my own journey and lock arms with an amazing community of women that support each other in everything, not just our business with Pruvit.

As a matter of fact, when I was devastated and lost my grandmother in September, she was one of the first people I text.

The collective energy of this Krew pulls us all up daily. We are the STRONGEST community of women I’ve ever come across and if I had looked the other way, I would have missed the opportunity of a lifetime.

I could be gone 50 hours per week like I used to be. Other people could be caring for my children all day while I’m away at work. But that’s not the case. Thank you Ashley for opening this door for me, and thank you for this true friendship. Love you to pieces, girl!!
Dec. 2018 I was looking to trim more than just my Dec. 2018 I was looking to trim more than just my tree. There was 80lbs to go along with it! 2 years ago started my journey on 12/26 and never looked back.

I had researched the science and watched from the sidelines about this system/product/supplement/ketone for probably about a year before deciding I literally had nothing to lose except the above mentioned 80 lbs of fat!

But I had everything to GAIN.

When you see before & afters or set a goal do you When you see before & afters or set a goal do you immediately wonder how long it took/or will take to get there?

Before I get into that - let me tell you that the necklace I’m wearing on the right was a choker on the girl on the left 🤯

I’d say one of the top questions I’ve been asked in my 2 years (next week is my KETOVIRSARY!) is how long it took me to shed the 80 lbs between these photos.

I shared a lot about that first year in my transformation video on YouTube which has over 150,000 views which blows my freakin mind! (Link in bio)

When I focused on the TIME it would take to get the thing I wanted, in this case a SHISH LOAD of fat loss, it felt overwhelming because I wanted that instant gratification.

When I started I was not in love with the girl on the left. In fact I RESENTED her big time for the crazy thoughts she had about herself & the ones caused by severe postpartum depression. I was embarrassed and uncomfortable thinking about what friends and family thought of me, being so overweight. Totally SURREAL looking back at that now.

If you’ve watched me on YouTube, you may have noticed I end every video saying the same two words, KEEP GOING. Even if you ate a Christmas cookie last night before bed like I did 🤪

Trying to be perfect in this journey would only set me back. I’m not the girl that will never ever in her life cheat. But, a lifestyle of keto + ketones supports that.

So KEEP GOING, and celebrate your victories along the journey. Celebrate when you create a new habit. Celebrate when you keep a promise to yourself. And know that all of these things DURING THE JOURNEY add up & get you to the result you want.
SMOTHERED CHICKEN THIGHS🥓 Here’s what I made SMOTHERED CHICKEN THIGHS🥓 Here’s what I made for dinner last night! So easy & some of the BEST chicken I’ve ever made!!

RECIPE 👇🏼 (def save this one!)

I seared my chicken thighs, both sides (7 bone in skin on) in my cast iron skillet in butter, starting with skin side down. Then I transferred them on to a wire rack on top of a rimmed baking sheet & baked them at 400 for about 30 min. (I like crispy skin 🙌🏼)

Then, add 8 slices of bacon, cut up into the skillet with the chicken drippings and fry until crispy. Remove with a slotted spoon and set aside. 

Sauté 3/4 cup diced onion and 2 cups of sliced mushrooms. Add 1 tbsp fresh Rosemary and 1 tsp fresh thyme until soft. Add a tsp of apple cider vinegar and a 1/2 garlic. Add bacon and stir.

NOTE - if you have the salad dressing Garlic Expressions, you can replace the apple cider vinegar and garlic with this dressing. Add 1 tbsp. This is actually what I did but I realize not everyone will have it on hand!

Serve chicken with bacon/mushroom sauté on top! Let me know if you try it!!! I started out following a recipe from my favorite cook book, Keto Comfort Foods (see my stories) and then modified it (which is usually what happens when I cook lol) And it was SO GOOD!
