I don’t know about you, but I definitely crave some “crunch” in my life! Pork Rinds are amazing but sometimes you just crave a good old fashioned chip, am I right? Insert, Nacho Night!
The whole family loved this meal, especially my hubby and Rosabella who isnt even 2 yeat!
Now before I get into the recipe, if your asking “Do I NEED an air fryer to make thes nachos, or do i even need an air fryer in general?” the answer is YAAASSSS my friend!! Let me save you some time in both cooking and clean up, just do it! I wish I would have bought this baby a year ago when i first thought about it! I am the QUEEN at collecting kitchen appliances so I convinced myself i did not need one, hence why I waited a year. But, now that I have it, I use the air fryer more than any other appliance I own! Hands down!
So with that out of the way…. let me show you how insanely easy it is to make these keto nachos!
I had left over taco meat from taco night which was the night before. I made enough to have left over for nacho night! If you are making nachos for 2 toddlers and 2 adults like I did, 1/2 lb of ground meat seasoned the way you like for tacos will be perfect!
Nacho Cheese Sauce:
2oz cream cheese
1/3 cup heavy whipping cream
1 cup shredded chedder (i shred mine fresh and store in the freezer)
1/2 tsp pink himalayan salt
1 tsp cumin
1 tbsp smoked paprika
Directions: Add all ingredients to a saucepan and melt down over medium heat stirring constantly so that the cheese sauce does not burn.
Air Fryer Tortilla Chips
1 package large size Mission Bell Carb Balance Tortillas
Directions: Cut tortillas into triangles. To do this, i cut each tortilla into quarters, then cut each quarter in half. Line the bottom of the air fryer basket with the tortilla triangles. They can overlap some but not too much so that they all crisp pretty evenly. Air fry on 400 degrees for 8 minutes. You will need to make a few batches.
When the chips are done, lay them out on a large plate or a few plates depending on how you want to serve. I just made one big plate and we shared. Next, top with whatever you’d like! I kept mine a bit simple because I have toddlers! I added taco meat, nacho cheese, avocado smash (individual portion packs from costco) sour cream, and picked jalapenos!
