Do you enjoy topping salads with warm foods or only cold?? I’m so into these autumn themed salads lately!
•
Dinner tonight for the hubs & I 🥗
〰️Greens, a mix of green lettuce, red kale, & romaine
〰️Oven Roasted Baby Carrots
〰️Air-fried Halibut, cooked with butter & lemon wedges
〰️Hubbys has freshly grated Romano cheese
•
The kids ate a cut up Chicken Quarter, carrots, and rice!
•
SO STUFFED!

GRATEFUL. I don’t mention the “C” word very

GRATEFUL. I don’t mention the “C” word very often. In fact most people don’t even know that this handsome, vibrant man is a survivor.
•
He doesn’t like to talk about it much. In fact we rarely do. But to share some insight into this I wanted to talk about it today, check up day.
•
Once you survive cancer, the doctors visits don’t just stop. There are countless follow up visits and scans. We have 7 more years of these visits in fact.
•
I prayed to the angels that the tests today would again say “all is good” “he’s as healthy as he looks”
•
These appointments are long, a few hours just for one test. So it’s kind of like you can’t think of anything else until you hear those comforting words. All is well.
•
The results of the first test were GOOD! 🙏🏼 Now on to the second...
•
This guy motivates me more than I can say. My endless pursuit to create the healthiest possible home for our family, the inspiration to keep my cool and not be quick to anger, and overall see the beauty all around us.
•
Because if this, I will never stop educating myself on health & the human body. Sometimes to him it may seem obsessive, but to me it’s an obsession worth every minute spent.

Lunch! 🥗 The PERFECT AUTUMN salad! The greens are a mix of romaine, green leaf, & red kale 🥬Topped with a mix of leftovers, warmed & my homemade roasted mixed nuts!

The mashed squash is enough so no dressing required but I did drizzle it all with some apple cider vinegar.
•

Going to the market is liter one of my favorite things to do 🙌🏼 So blessed we have one stocked with all local produce and products at the end of our street!

Here is our family market haul for the week! And those are pie pumpkins so I’ll be roasting them for a meal! (Probably a creamy pumpkin soup!)

I’ve learned the best thing for zero waste with our produce is to clean and chop up everything right away. I clean all of my produce in a water & Apple cider vinegar bath first, then store it all prepped do it’s easy to grab and eat when any of ya get hungry!
•
This is especially helpful for the kids - idk about your kids but mine are NOT COOL with waiting for anything when they are hungry 😂
•
For our salads this week I chopped up a combo of romaine, green leaf, and red kale 🥬

When they say “Mama I want to snuggle you” that’s when you DROP EVERYTHING and soak it all up! 🤍

I missed most of Leonardo’s first year working long days, long weeks, and 30 minutes from home in a corporate job I spent 8 years working my ass off for til I got to the level of management I thought I wanted.
•
I was offered the position on thanksgiving day, I’ll never forget it.
•
I didn’t say yes immediately and that always stuck with me. Isn’t this what I’ve been working for?? I spent a week going back and forth on whether I should graciously accept or comfortably say no.
•
My intuition said NO. But everyone else was so encouraging and said YES. This is the next step.
•
I went against my intuition. Have you ever done that? How’d things go?
•
Every time, and I mean every time I’ve opposed my intuition I’ve learned I should have listened.
•
By Leonardo’s 1st Birthday (also my 1st Mother’s Day), which I worked by the way, I was burned out. I could have gone back to my old position, but I was too exhausted to even consider that.
•
Flash forward to now - when I left that job I did not have it all figured out, at all. It was uncharted territory for me. I had been in the same business since I was 19. Did I know how to do anything else?
•
I definitely didn’t know anything about blogging, vlogging, editing video, how hashtags work, or what network marking was. I barely even posted on social media.
•
But one thing is for sure, when you want something bad enough, in my case to be a mom, and your intuition is on your side, there’s NO STOPPING YOU.
•

Who has roasted their own nuts?! GAME CHANGER!!! It takes some self control to not eat this whole crunchy jar full! Save this for later friends! 🥜

These are the easiest thing in the world and the flavor is unbeatable!
•
〰️Preheat oven to 325°F
〰️Melt 4 tbsp coconut oil for 2 cups of mixed raw nuts
〰️Toss nuts in coconut oil and spread evenly onto a baking sheet
〰️Sprinkle with pink Himalayan salt and roast until golden brown! This step is different for every oven so watch closely! Could be 10 min could be 20!
〰️Try not to eat the whole jar!

The only cookies better than these are FREE cookies... (read on for giveaway!) And I don’t know about you but Cookies are DEFINITELY my weakness y’all!! Chocolate chip cookies (& the dough) to be exact! And when you go keto, there are TONS of cookie recipes to choose from but all are so different.

I found that my stomach was a bit sensitive to many of the keto cookies out there and the stomach ache wasn’t worth the pleasure....

These cookies by @fancypantsbaker are LEGIT the treat for me! They are chewy and have spot on flavor which is hard to find!

We do both but I’m REALLY liking having the meal on the table. My toddlers are way more tonight than usual 🙌🏼 that’s worth it’s right there to me!
