The BEST Keto Chocolate Protein Pudding

I don’t know about you, but I am definitely a fan of comfort food so when I saw this recipe for keto chocolate pudding that looked SPOT ON I tried it the very same day!!

I snagged the idea from Maria Emmerich and then modified to what I had on hand. She had originally created this recipe because one of her sons refused to eat eggs. WELL, as an determined momma would do, she got clever in the kitchen and decided he was going to eat eggs one way or another!

So the secret ingredient to this magic pudding is….. are you ready..??? Hard boiled eggs!! I know I know it sounds super weird but just trust me!

So here is the recipe that I followed to make mine! I’ll also share the original recipe that Maria Emmerich wrote and you can choose which you’d like to make first!

One final note, I would definitely measure out the servings because this is so good it’s easy to overeat! Enjoy!

Jannelle’s Modified Hard Boiled Egg Pudding

10 hard boiled eggs, peeled

14 oz (or 1 2/3 cup) Heavy Whipping Cream

1/2 cup Swerve confectioners

1/4 cup unsweetened cocoa powder

2 tsp Vanilla

1 tsp Cinnamon

1/4 tsp pink salt

Add everything to your blender and blend well until very smooth!

Maria Emmerich – Original Recipe

10 hardboiled eggs, peeled

14oz canned coconut milk

1/2 cup Swerve confectioners

1/4 cup unsweetened cocoa powder

2 tsp Vanilla

1 tsp ground Cinnamon

1/8 tsp Redmonds Salt
